Founded on January 18, 1535 by Spanish conquistador Francisco Pizarro, Lima was the capital of the most powerful viceroyalty in the Americas for over 250 years. 1. CEVICHE: PERU'S NATIONAL TREASURE
Peruvian ceviche is arguably the most internationally recognized dish in Latin America.
